Ramen

"Power of Bones"
We make our Ramen in-house. Fresh pork and chicken bones are boiled in a large pot at the highest heat for 20 hours to extract the maximum flavor and Umami from the pork and chicken. Time and effort are key ingredients of our Ramen.

Slow cooked Berkshire pork bellies, Shoyu-marinated soft eggs, sweet yellow corn, fresh mung bean sprouts, wakame, scallions and crispy nori form the delicious base.

From there, we make three varieties from which to choose: Shoyu (soy sauce), Pork and Miso (soy bean).
