Ramen
"Power of Bones"
Fresh pork and chicken bones are boiled in a large pot at the highest heat for 20 hours to extract the maximum flavor and Umami from the meat. Time and effort are key ingredients of our Ramen. We make our Ramen from slow cooked Berkshire pork bellies, shoyu-marinated soft eggs, sweet yellow corn, fresh mung bean sprouts, wakame, narutomaki fish cake and scallions. From that delicious base, we make three varieties from which to choose: Shoyu (soy sauce), Pork, and Miso (soy bean).
